Birria specialist Kike’s Red Tacos opens Denver restaurant in May
A Denver birria taco specialist is back with a roof over its head.
Kiké’s Red Tacos, which won The Denver Post’s 2022 taco bracket, is opening its first brick-and-mortar restaurant at 1200 W. 38th Ave. in Denver on May 23.
So, instead of waiting outside in camping chairs or rushing to the popular food truck’s parking lot before it sells out every day during lunch, customers can now comfortably chow down on rich Mexican stewed beef tacos in a 2,000-square-foot space.
“We started our small family-operated business three years ago now, and we’re filled with immense gratitude for each and every one of you that’s ever given us the opportunity to serve your families,” the business wrote on Instagram. “Regardless of the occasional extensive wait times, inconsistent schedules, and sometimes harsh Colorado weather, you guys continued to support our taco truck through it all, and we genuinely couldn’t thank you enough for that.”
“We hope to resolve those issues with this new space as well as expand our menu just a bit,” Kiké’s continued.
Cesar Silva Gonzalez helped his parents Enrique Silva Figueroa and Olivia Gonzalez launch Kiké’s Red Tacos in late 2020. It has moved three times, most recently to a parking lot at the southeast corner of Meade Street and West 38th Avenue. Kiké, which is short for Enrique, is a family name that has been passed down for generations. When they decided to open the business, they also did so instead of buying a family home.
Birria tacos have been trending on social media and in local Mexican restaurants for the past couple of years, but Kiké’s gained a viral following thanks to its TikTok and Instagram-friendly birria tacos, burritos, quesadillas, tortas and even ramen bowls.
Its quesatacos are another popular specialty. The corn tortillas are dipped into the birria consomé, or broth, before grilled to a crunch (and to a slightly red hue, hence the name). The rich stewed meat is layered with melted cheese and topped with onions, cilantro and lime juice.
