Kim Kardashian’s go-to breakfast – and how to make it in just 10 minutes

In the last season of The Kardashians, health-guru Kim was spotted eating a chia seed pudding for breakfast which, naturally, sparked interest in her loyal followers trying out the dish for themselves.

Chia seeds are the edible seeds of Salvia Hispanica, a flowering plant from the mint family native to Mexico but they are available from most supermarkets and all good health food stores in the UK.

The seeds miraculously absorb copious amounts of liquid making it a really hydrating, filling and healthy dish. Often completing up to 3 workouts a day, Kim likes to fuel her body by adding plant milk and plenty of blueberries to hers.

Nutritional expert Petronella Ravenshear shares her delicious recipe for a perfectly balanced breakfast, as well as other nutrition-rich dishes that will keep you glowing from the inside out all week long.

Chia Seed Pudding

Serves 2 / Ingredients

Ingredients

  • 4 tbsp chia seeds
  • 240 ml dairy or non-dairy milk,
  • 2 tbsp unsweetened dairy or non-dairy yoghurt, e.g. soya or coconut
  • Clear honey or maple syrup, for drizzling (optional)
  • Berries for topping, e.g. strawberries, raspberries, blueberries, blackberries

Method

Lemon Chicken Souvlaki

Serves 2 / Ingredients

  • 1 tsp fennel seeds
  • A good pinch of dried oregano
  • Grated zest and juice of 1 unwaxed lemon
  • 260g chicken breast fillets, skinned and cut into chunks
  • 4 woody sprigs of rosemary
  • 1 small red onion, peeled and cut into chunks
  • 160g spring greens, shredded
  • 2 garlic cloves, crushed
  • A handful of flat-leaf parsley, chopped
  • Sea salt and freshly ground black pepper

Method:

Quick Salmon & Broccoli Courgetti

Serves 2 / Ingredients

  • 2 x 130g salmon fillets, skinned
  • 2 tsp lemon juice
  • 4–5 tbsp good-quality vegetable stock
  • 1 small red chilli, deseeded and diced
  • 60g thin sprouting broccoli, trimmed
  • 50g thin asparagus, trimmed
  • Grated zest and juice of 1 small unwaxed lemon
  • 150g courgettes, cut into long thin strips
  • Sea salt and freshly ground black pepper

Method:

Beef Kofta Skewers

Serves 2 / Ingredients

  • 260g minced beef
  • 60g red onion, grated
  • 1 garlic clove, crushed
  • 1 red chilli, deseeded and diced
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • A handful of coriander, chopped
  • 2 tbsp olive oil
  • 100g courgettes, thickly sliced
  • Sea salt and freshly ground black pepper

For the spicy tomato salsa

  • 40g red onion, diced
  • 60g juicy tomatoes, diced
  • 1 red chilli , deseeded and diced
  • A handful of coriander, chopped
  • Juice of 1 small lemon
